Saffron Cheesecake

 

Creamy, smooth and delicately infused with premium Persian saffron, this elegant cheesecake combines a buttery biscuit base with a rich cream cheese filling. Finished with pistachios and edible rose petals, it is the perfect dessert for special occasions or refined afternoon tea.

Ingredients

Digestive biscuits 250 g
Unsalted butter, melted 100 g
Cream cheese 600 g
Sour cream 200 g
Granulated sugar 180 g
Large eggs 3
Zadeh Organic Persian Saffron ½ tsp
Hot water 2 tbsp
Ice cubes 2
Vanilla extract 1 tsp
Cornstarch 1 tbsp
Chopped pistachios 30 g
Dried edible rose petals (optional) For garnish

Instructions

Step 1 – Prepare the crust

Preheat the oven to 160°C (320°F).

Crush the digestive biscuits into fine crumbs and combine with the melted butter. Press the mixture firmly into the base of a 20 cm (8-inch) springform pan.

Bake for 10 minutes, then allow to cool completely.


Step 2 – Bloom the saffron

Grind the saffron threads gently and combine them with the hot water and ice cubes. Allow to infuse for 10–15 minutesto fully release the colour and aroma.


Step 3 – Prepare the filling

Beat the cream cheese until smooth.

Add the sugar, then mix in the sour cream, vanilla extract and cornstarch.

Add the eggs one at a time, mixing gently after each addition.

Finally, stir in the infused saffron.


Step 4 – Bake

Pour the filling over the cooled biscuit base.

Bake for 50–55 minutes until the edges are set while the centre still has a slight wobble.

Turn off the oven, leave the door slightly open and allow the cheesecake to cool inside for 1 hour.


Step 5 – Chill & decorate

Refrigerate for at least 6 hours, preferably overnight.

Before serving, decorate with chopped pistachios and edible rose petals.


Chef's Tip

For an even silkier texture, all ingredients should be at room temperature before mixing. Avoid overbeating the batter after adding the eggs to prevent cracks during baking.
